8-10 small Malu miris (Banana Peppers)
2 tbsp of oil
SaltIngredients for filling:
1 tbsp oil
1/2 lb red onions, sliced finely
1/4 lb maldive fish pieces (optional)
1 tbsp chilli powder
a sprig of curry leaves
2 inch piece cinnamon
Salt to taste
Make filling:
Mix all the filling ingredients and stir fry in about 1 tbsp of oil in a pan for about 4-5mins under low heat.
Set aside.
Now prepare the peppers:
Slit the peppers lengthwise, just long enough to stuff the fillings.
Carefully remove the seeds, taking care not to break the pepper.
Fill the cavity with the filling.
Heat a saut� pan. Add about 2 tbsp of oil. Stir fry the stuffed peppers, taking care not to break.
Add about a 1/4 cup of water* with a pinch of salt, cover and cook for about 3-5 minutes under low heat.
Serve hot.
* Alternatively you can substitute water with coconut milk.
