125 ml olive oil, 2 eggs 160 grms sugar 185 grms self raising flour 2 tsp orange zest 2 tsp lime zest 60 ml milk 60 ml orange juice
Preheat oven to 180c. Grease and line the base of a 20cm cake tin. Beat the eggs & sugar in a large bowl until pale and fluffy. Add olive oil, orange and lime zest. Beat well into mixture. Sift the flour and add to the mixture alternately with the milk and orange juice. Mix well for about 30 seconds. Pour the mixture in to the baking tin and bake for about 45 mins or until done.
